{"id":5850,"date":"2024-08-09T12:27:10","date_gmt":"2024-08-09T12:27:10","guid":{"rendered":"https:\/\/passportacapulco.com\/?p=5850"},"modified":"2024-10-27T04:01:13","modified_gmt":"2024-10-27T04:01:13","slug":"huitlacoche-el-dios-negro-de-la-cocina-mexicana","status":"publish","type":"post","link":"https:\/\/masternews.online\/reason2go\/a-comer\/huitlacoche-el-dios-negro-de-la-cocina-mexicana\/","title":{"rendered":"Huitlacoche, el \u201cdios negro de la cocina mexicana\u201d"},"content":{"rendered":"<h2>La tambi\u00e9n llamada \u201ctrufa mexicana\u201d, es un hongo comestible que aparece en las mazorcas de ma\u00edz y prolifera en la temporada de lluvias.<\/h2>\n<p>Se da naturalmente en todos los cultivos de ma\u00edz del mundo, pero es exterminado por considerarlo \u00fanicamente como un par\u00e1sito, sin embargo en M\u00e9xico ha formado parte de nuestra dieta desde la \u00e9poca de la Colonia y es reconocido como una delicia gastron\u00f3mica.<\/p>\n<p>En la \u00e9poca prehisp\u00e1nica era considerado como algo indeseable porque significaba la p\u00e9rdida de la mazorca, pero durante el periodo de hambruna de la Colonia se convirti\u00f3 en un alimento de subsistencia para los ind\u00edgenas y campesinos.<\/p>\n<p>La temporada de huitlacoche alcanza su m\u00e1ximo esplendor entre julio y septiembre, siendo el Valle de Serd\u00e1n, en Puebla, el l\u00edder en su producci\u00f3n.<\/p>\n<p>Actualmente es reconocido como ingrediente gourmet y su consumo es tan popular que incluso se ha tecnificado su producci\u00f3n y actualmente se exporta a otros pa\u00edses.<\/p>\n<h3>Ingrediente ideal<\/h3>\n<p>Una de las ventajas del huitlacoche es que puede utilizarse en diversas preparaciones, en su forma m\u00e1s simple como relleno para quesadillas, tlacoyos, gorditas y dem\u00e1s antojitos,<\/p>\n<p>en la preparaci\u00f3n de sopas, salsas y cremas. Como elemento principal, o como el acompa\u00f1ante ideal para cualquier platillo.<\/p>\n<p>Por cierto, si se consume en antojitos, se recomienda que se elaboren al comal para evitar grasas innecesarias y disfrutar de sus ventajas nutricionales.<\/p>\n<p>La mayor\u00eda de las veces el huitlacoche se consume fresco, debido a su corta vida \u00fatil (de dos o tres d\u00edas). Lo que promueve que su aporte nutricional sea m\u00e1s alto que otros alimentos que se almacenan o transportan por m\u00e1s tiempo. Y se puedan aprovechar los nueve amino\u00e1cidos esenciales que contiene, aquellos que el organismo no es capaz de sintetizar por s\u00ed s\u00f3lo y deben incluirse en la alimentaci\u00f3n. Adem\u00e1s de minerales y fibra.<\/p>\n<h3>Los beneficios del huitlacoche<\/h3>\n<p>En M\u00e9xico han estudiado las propiedades terap\u00e9uticas del huitlacoche, principalmente porque es antioxidante y contiene m\u00e1s fibra que los frijoles, garbanzos y avena.
