Es una receta que tiene su origen en la zona noroeste del pa\u00eds, en la zona situada entre el<strong>\u00a0Piamonte, Lombard\u00eda y Verona<\/strong>, donde se utiliza m\u00e1s el arroz como un ingrediente habitual.<\/p>\n<p>Aunque en nuestro pa\u00eds el risotto se suele elaborar con las\u00a0<strong>variedades Carnaroli o Arborio<\/strong>\u00a0como se indicaba antes, debido a que son las variedades m\u00e1s f\u00e1ciles de conseguir en nuestro pa\u00eds, en Italia se utilizan tambi\u00e9n las variedades Baldo, Maratelli o Padano, que son arroces de gran calidad que tienen dos propiedades fundamentales:<\/p>\n<ol>\n<li>Capacidad de\u00a0<strong>absorber l\u00edquido<\/strong>(caldo de la cocci\u00f3n que aportar\u00e1 el sabor)<\/li>\n<li>Capacidad de\u00a0<strong>liberar almid\u00f3n<\/strong>(lo que dar\u00e1 a la receta la textura melosa caracter\u00edstica de los risottos)<\/li>\n<\/ol>\n<p>En general,\u00a0<strong>los risottos se elaboran con tiempo y atenci\u00f3n<\/strong>\u00a0ya que su preparaci\u00f3n exige gran dedicaci\u00f3n ya que hay que estar pendiente y removiendo durante los 20 a 30 minutos que se tarda en la cocci\u00f3n, a diferencia de otras recetas de arroz que se pueden preparar sin especial atenci\u00f3n, dejando cocer el arroz .<\/p>\n<p><strong>No hay que a\u00f1adir nata l\u00edquida<\/strong>, ni otra crema al risotto, sino conseguir esa textura especial a base de remover y a\u00f1adir al final de la cocci\u00f3n un poco de mantequilla y queso parmesano, ya sea en polvo, o en finas lajas colocadas sobre el plato terminado.<\/p>\n<h3>Paso a paso<\/h3>\n<p>Dependiendo de la receta elegida, el risotto tendr\u00e1 unos u otros ingredientes, pero en general,\u00a0<strong>siempre tendr\u00e1 los siguientes ingredientes<\/strong>\u00a0comunes: 1\/2 cebolla, 1 chorro de vino blanco, el arroz y un caldo con el que hidratarlo. Adem\u00e1s tendr\u00e1 unas setas, unas verduras o unas hortalizas con las que conseguir el sabor y es posible que incluso se a\u00f1adan otros ingredientes del grupo de las prote\u00ednas, si se quiere elaborar un risotto con calamares, mejillones, gambas, salchichas o cualquier otro sabor.<\/p>\n<p>El plato se elabora de la manera siguiente. Por un lado, se pone una olla con el caldo a calentar, manteni\u00e9ndolo cercano a la ebullici\u00f3n. En el cazo donde se va a elaborar el risotto, se ponen dos cucharadas de aceite de oliva y en \u00e9l se sofr\u00ede la cebolla picada, a fuego lento.<\/p>\n<p>Cuando la cebolla est\u00e9 transparente, se incorporan y saltean los dem\u00e1s ingredientes que se vayan a usar en el risotto. As\u00ed podemos a\u00f1adir unas setas muy picadas, o unos trocitos de esp\u00e1rrago, zanahorias o lo que tengamos previsto. Tras saltearlos, a\u00f1adimos el arroz y se sofr\u00ede ligeramente hasta que alcanza un color nacarado. Se a\u00f1ade un\u00a0<strong>chorro de vino blanco<\/strong>\u00a0y se remueve hasta evaporar el alcohol.<\/p>\n<p>A partir de ahora, con esa base hecha, solamente hay que ir a\u00f1adiendo el caldo para que se vaya hidratando el arroz. A diferencia de otro tipo de cocciones de arroz, los risottos se preparan olla a olla,\u00a0<strong>a\u00f1adiendo un cazo de caldo cuando el anterior ha sido absorbido<\/strong>\u00a0y sin dejar de remover, aunque sea lentamente nuestro plato.<\/p>\n<p>Luego de 20 minutos, se prueba para ver el nivel de sal y sabor y para ver c\u00f3mo el arroz va estando cada vez m\u00e1s tierno, m\u00e1s meloso y c\u00f3mo se van uniendo unos granos a otros con el almid\u00f3n que va soltando, y \u00a1listo\u2026 a disfrutar!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Este cl\u00e1sico de la cocina italiana consiste en un arroz cremoso o meloso en su exterior, como consecuencia de la salida del almid\u00f3n del grano, y un interior m\u00e1s al dente Es uno de los modos m\u00e1s comunes de cocinar arroz en Italia.
